I just noticed that the Monterey Bay Aquarium actually has recipes posted on their website. This month's dish is
"Dungeness Crab with Cellophane Noodles". Looks very tasty, but...am I the only one who thinks this is just a little odd? I mean, this is basically like a zoo posting recipes.
"Zebra Fillets with a Rich Zinfandel Reduction", anyone?
Oh, but wait. I forgot to mention that these recipes are sustainable. We're not sure how many Zebras there are in Africa right now, so how about
"Prairie Dog Soufflé with Baby Field Green Salad"? I know there are lots of those little guys roaming around.

I know the restaurants in SF called these "silver" noodles. A little more appetizing than cellophane I think
