I Made Cheese!



I made cheese after work yesterday! No, I really did. A batch of fresh Indian Paneer, which I fired up and served with a big steaming bowl of homemade Dal (lentil) soup!

Did I mention...

I made cheese!?!

Yummy! I had some paneer last night too in a yummy spinach sauce..NOT made by me.

My husband amazes me with his culinary talents! Can you believe he came home from work and stirred up a big batch of cheese? And it was delicious ! Everyone loved it, including Mom and Dad!

So just how do you make cheese, showoff? (Yes, I'm jealous - I've never made cheese.)

It involves bringing whole milk to a boil and the adding just the right amount of an acid (in India they use limes, in Italy they use vinegar to make Ricotta, which is very similar).

Let it curdle, put it in cheesecloth and drain it. Then spread it out and let it dry some more. Cut it up and fry it in a pan to brown it.

You should make some for Thanksgiving. I'm pretty sure the Pilgrims had limes. And cheesecloth. And Indian recipes. And hungry sisters.

This is Indian "dot not feather" cheese, but I can still make some :)
